Unless the traffic can be categorized by destinations/ports/etc., it will require some "higher-level" analysis of the packets to categorize the applications (i.e., DPI-like functionality) and it is not currently supported (though as discussed before we might look into that).

Layer 7 packet classification is a feature I'd like to have. I believe nDPI would work well for this (should be better than l7-filter). It makes an effort to classify encrypted traffic by the SSL certificate used.
Anyway, currently it is possible to classify packets by port number, layer 3-4 protocol, or IP. You wouldn't be able to classify youtube traffic specifically (I suppose technically you could classify by IP, but that's just not practical, since there are a lot of servers used, and you wouldn't really be able to keep track of them)
