When I copy a file from my computer to my NAS (9 GiB) over WiFi with UnifiAP I have serveral issues.
First: I normally only get up to 2 MiB/sec - with a FritzBox from AVM (7390) from AVM I got up to 10 MiB but it wasn't able to cover the whole house and it also crashed when there were 7+ Devices connectet (thats the reason why I've bought three unifi ap's.
Second: In general my ap crashes after a few minutes while copying a large file to the NAS.
The controller does not really notice that the ap crashed it just shows that my two other ap's connected via Wireless Uplink disconnect (And thats because the AP which I also use for Wireless Uplink crashed.
Any ideas how to get rid of this?

I tried to reproduce your problem, but unfortunately I was unable to do this. In my topo, which included: USG, UBNT switch, cloud key, two APs (UAP-AC-Lite and UAP-AC-Pro), and few clients (laptops and smartphones), when I tried to send large files (~10 GB) between two laptops using scp everything was correct - I mean: clients have no problem with the access to the Internet and speedtests were also correct. I have tested it in 2.4 GHz band as well as in 5GHz (standards: a/b/g/n/ac).
