splitting 2.4 and 5ghz wifi guidance

I'm using 2 x UniFi AP-AC-HD access points that I've just upgraded to the current firmware at time of writing of 

3.8.3.6587 that I'm managing via a cloudkey.
 
when I purchased these devices I did what I thought was an acceptable level of research, but I've had some issues which I believe I've created my self from not fully understanding the documentation, so while I'm doing the firmware upgrade this seems the right time to clarify my two issues to the more experienced user community. 
 
In my previous setup that was not ubnt, I had to split the 2 WIFI signals 2.4/5 ghz into two different SSID's
 
eg: mysid-24 and mysid-5
 
My initial understanding of the ubnt AP's would be best served by allowing them to create a mesh between the t AP's and the 2.4 and 5ghz channels so that one SSID is presented the offers the 2.4/5 ghz signal between both AP's and let the software manage if / best connection.
 
Re-reading the docs I'm not sure if this is the case (or even possible which makes me think my config is totally wrong).
 
Is the best way to present two channels as two seperate SSID's or is there a way / better to present one SSID that presents the whole network and let the UBNT software manage who connects to what ?
